I saw this recipe and video on Cooking Up a Story, and I thought you all might be interested in checking it out. We like twice baked potatoes, but the only green I’ve ever added to them have been chives. These potatoes are filled with kale and onions that have been cooked in stout. Topped with melted cheese, it all sounds so delicious, doesn’t it?

Look at all the health benefits kale has: Vitamins A, C, K; cancer-preventing com-pounds sulforaphane, isothiocyanate and indoles; fiber. Also significant amount of Vitamin B6 and calcium. (source: World Community Cookbook).
