Check out New Zealand's Yealands Estate (yealands.com) whose winery was built with the sustainability in mind, and was the first winery certified carbon neutral as soon as it opened, as well as utilising innovative practices like baby doll sheep to graze cover crops instead of using traditional tractor mowers.
You used the term "oenophiliac" which I don't believe exists. I believe that oenophile is the appropriate term.
