6 easy and healthy meals
I've been concentrating on simple meals lately. Here are some of my favorites.

Yesterday I told you about the tiredness I have been experiencing lately and shared six ways I am trying to eat healthy despite the challenges. One of the tips I shared was keeping my dinners really simple. To expand on that idea, I thought it would be fun to share six of my favorite simple meals.
 
Crockpot Spaghetti Sauce: This was my mother’s recipe. I love to make it when we are having people over. Other times I just make a simple sauce and sometimes I add a pound of ground beef to it.
 
Roasted Chicken: While this takes two hours to cook, it is simple to prepare. Other times I just stick it in the slow cooker.
 
Roasted Vegetables and Meats: It is a simple idea. Roast vegetables and meats together for a one-dish meal. There are a lot of different ways to expand on this idea!
 
Cabbage and Meat (shown above): My mother-in-law makes this unusual dish, sometimes with ground beef and sometimes with sliced, all-beef natural hot dogs. We love it (strangely enough), and it is super simple to put together.
 
Simple Chicken Noodle Soup: When I had morning sickness, my husband would make pots of this soup. Did I mention that my husband does not do enough cooking? The fact that this was something he chose to make over and over again speaks of its simplicity.
 
Slow Cooker Quinoa and Chicken: This has been a family favorite and this simple recipe has been shared on many different websites since I first shared it.

Match up a crockpot of spagetti sauce with a crockpot of polenta and go Southern Italian. Polenta is prefect for hours in a way that al dente' pasta isn't. Cut up chicken on a cookie sheet with dehydrated potato flakes, salt, and pepper and baked. Remember to put foil on the pan first and skip washing it. File' Gumbo is a cajun trick. File' is the leaves of the sassafrass tree, dried and powdered. The Gumbo is a thin watery rather bland soup of at least two meats and vegatables. Pork n chicken, pork

n seafood, really just whatever you have on hand. The cook makes a pot of gumbo, some white rice and/or some corn bread. You dip up a bowl and become the master of its creation. Thicken the soup with rice or corn bread or file' or some combination thereof. You can add hot sauce, vinegar, salt, sugar or whatever to make a bowl to your liking. This way cajun cooks could cook for very diverse tastes from one pot. Its also why lousianna has so many hot sauces.
