Yesterday I told you about the tiredness I have been experiencing
lately and shared six ways I am trying to eat healthy despite the challenges. One of the tips I shared was keeping my dinners really simple. To expand on that idea, I thought it would be fun to share six of my favorite simple meals.
Crockpot Spaghetti Sauce:
This was my mother’s recipe. I love to make it when we are having people over. Other times I just make a simple sauce and sometimes I add a pound of ground beef to it.
While this takes two hours to cook, it is simple to prepare. Other times I just stick it in the slow cooker.
Roasted Vegetables and Meats:
It is a simple idea. Roast vegetables and meats together for a one-dish meal. There are a lot of different ways to expand on this idea!
Cabbage and Meat
(shown above): My mother-in-law makes this unusual dish, sometimes with ground beef and sometimes with sliced, all-beef natural hot dogs. We love it (strangely enough), and it is super simple to put together.
Simple Chicken Noodle Soup:
When I had morning sickness, my husband would make pots of this soup. Did I mention that my husband does not do enough cooking? The fact that this was something he chose to make over and over again speaks of its simplicity.
