Chef A is cooking chicken again. This week, it’s mushroom chicken. Not only did Chef A make it; I made it, too. And it’s yummy. Creamy and mushroomy and savory. I also followed her instructions and cut my chicken breasts into thinner pieces without slicing my hand open. Success all around.

I used crimini mushrooms in my sauce. They are darker and richer in flavor than regular white button mushrooms, but button mushrooms would have worked fine for this, too. I also used one of my cooking prep shortcuts and used jarred minced garlic instead of fresh. As I’ve said before, when I’m trying to throw together a meal on a weeknight, I usually reach for jarred garlic instead of fresh.

Ingredients

  • *chicken breasts
  • olive oil
  • garlic
  • sage
  • garlic pepper
  • salt
  • cream
  • sliced onions
  • sliced mushrooms
  • butter
*For this recipe, you will need Chef A's basic chicken breast prep. Flatten a chicken breast (holding a paper towel between the chicken and your palm), and slice evenly through the breast so it's a thin piece. Gently rub salt, pepper, and garlic pepper on both sides of the piece of chicken. Place chicken in a pan that has warmed to medium heat with two tablespoons of olive oil. Cook for three minutes on each side.

Cooking directions

  1. Add olive oil and 1 tablespoon of butter to a hot pan on medium to medium-high heat
  2. Add onions to the pan and sauté for 5-8 minutes (until slightly brown and tender)
  3. Add the mushrooms and cook for another 5 minutes
  4. Add the garlic to the pan and sauté for 30 seconds
  5. Add sage, salt and garlic pepper
  6. Add 1/2 cup of cream to the vegetable mixture
  7. Put the pan on high heat and cook for about five minutes or until the sauce has reduced by half
  8. Spoon the sauce over the chicken breasts and enjoy!
