Obis One is a farm in Pennsville, N.J., that's doing some exciting, innovative farming. I recently had the opportunity to visit the farm for a day, tour the fields of organic black garlic, soy, corn and more, and enjoy a multi-course garlic-inspired dinner in the beautiful old farm house owned by farmers Lisa and Pat Lloyd.
At Obis One, sustainability and innovation are at the forefront of everything they do. Their farm has such a rich history, and Lisa and Pat are committed to being good stewards of the land that they've been entrusted with. The 18 acres that they own were originally owned by Chief Obisquahassit, a Lenape Indian, and Obis One has been deemed the oldest continually working farm in the state of New Jersey. The Lloyds intend to make sure the land continues to be farmable for generations to come.
I could tell you about several innovative, sustainable projects they have going on, like a "fertigation" system that Pat has developed. Or the woods on their property where the downed limbs are being inoculated with mushroom spoors to see what they come up with, but John and Lisa can tell it better than I can. What I do want to tell you about in detail is the fermented black garlic. The Lloyds say that Obis One is the only organic manufacturer of black garlic in the United States, and from everything I've tasted, they do what they do very well.
They start with raw organic bulbs grown on their property and use their own proprietary aging and fermentation process to turn them into black garlic. Once the garlic is transformed, its antibiotic and antioxidant properties double. It's soft, sweet and savory, and as an added bonus, it doesn't create "garlic breath" the way raw garlic can.
