Pamela's Products Cornbread & Muffin Mix

An all-natural mix that's wheat-free, gluten-free and made with organic ingredients.

A while back I was given a box full of gluten-free products to try out and write about if I found any that my family liked. No one in my family has Celiac disease or any other health reason to stay away from wheat or gluten, so I didn’t know what to expect.
 
The boys tried a few of the products out of the box that appealed to them — cookies, cereal bars and breakfast cereal from various manufacturers. Not much of it got past one or two bites.
 
Tonight, as I was searching for something in my cupboards to go with meatloaf, I found a package leftover from that box that hadn’t been tried yet, Pamela’s Products Cornbread & Muffin Mix. Pamela’s Products is a line of cookies, cakes, cheesecakes and baking mixes that are all wheat-free and gluten-free.
 
I made the cornbread mix in an 8x8 pan according to the package directions. The cornbread was delicious. I wasn’t sure what I was going to find in a gluten-free baked good, but I wouldn’t have guessed this had different ingredients from a regular cornbread mix. The mix also makes corn muffins and a tart crust.
 
Here are the ingredients: Organic Degermed Corn Meal; Brown Rice Flour; White Rice Flour; Tapioca Starch; Sweet Rice Flour; Potato Starch; Organic Degermed Corn Flour; Grainless & Aluminum Free Baking Powder (Sodium Bicarbonate, Sodium Acid Pyrophosphate, Potato Starch); Sea Salt; Xanthan Gum.
 
I added eggs, butter, sugar and water to the mix as directed, and we had sweet, moist cornbread for dinner. The tagline on Pamela’s Products website says “Indulge with confidence!” This cornbread is a bit of an indulgence; I only ate one piece, but it was one delicious piece. Others at the table ate more than one piece.
 
For those with Celiac disease who are looking for baked goods made with natural and organic ingredients, I’d say give Pamela’s Products a try.
