Seasonal recipe: Small batch strawberry jam

Interested in canning jam but feel overwhelmed by the enormity of the process? This video shows you how to make a small batch without special equipment.

I found this video on Cooking Up a Story that makes creating your own jam and preserving it actually look doable. Canning is something I haven't tried yet, and I don't know when I'm going to get around to it. But with strawberries in season right now and other berries on their way, I thought sharing this video of someone who does know how to do it would be helpful.

I like that it's not as sweet as most store-boughts. Have you noticed many are beginning to leave out HFCS? They still use corn syrup, but it isn't as sticky-sweet as the ones with HFCS, imo.

And thanks to mnn for sharing the video!

Ever hear that Michelle Shocked song where she sings about the revolutionary qualities of making strawberrry jam? It's great. One time I listened to the album it's on, Arkansas Traveler, several times while cooking down strawberry jam. I just washed and cut the tops off a big pot of strawberrys and cooked it down with about two pounds of sugar. I figued it was done when it was thick. I put it in old jam jars, leaving it in the back of the fridge until I ate it. Worked out great. Nowhere near as.... More

you with the headline. There is a recipe within the video. Wow - 2 pounds of sugar and not as sweet as store bought. What does that say about store bought?
