Yesterday, I told you about some new cookbooks that are tailored toward using what’s local and seasonal. Another really excellent resource for seasonal recipes is farmers market websites. The recipes on these sites usually use ingredients that can be purchased at the market along with other basic ingredients.

I’m growing spinach for the first time in my garden. It’s not ready yet, but the spinach at my local farmers market is abundant. I thought I’d hunt down some recipes from farmers markets’ websites for when my spinach is ready and share them with you.

Spinach, Scallion and Asparagus Salad – Talk about a seasonal salad. This recipe from Carrboro Farmers Market in North Carolina uses three greens are abundant in many regions right now. The dressing takes on a Moroccan flavor with the combination of olive oil, fennel, cumin, and citrus.

Vegetable Frittata – Davis Farmers Market in California shares this recipe that includes spinach, farm fresh eggs, mushrooms, and other ingredients found at the farmers market. This is one of those recipes that works for breakfast, lunch or dinner.

Spinach and Sweet Potato Soup – Louisiana’s Crescent City Farmers Market brings us this recipe for a chilly spring or fall evening. I’d switch out the margarine for real butter, but other than that this recipe that uses smoked sausage, sweet potatoes, spinach, red bell pepper, and several fresh herbs looks like a winner.

Spinach Salad with Fresh Chevre on Crisp Wonton – If you’re looking for something different to start a meal with and impress your dinner guests, this looks like the recipe to do it. Washington’s Paulsbo Farmers Market shares this recipe for spinach and goat cheese served on top of a deep fried wonton with a simple dressing. It looks delicious.

Spinach Pesto Sauce – Of course, I had to get a recipe in here from my farmers market, Collingswood Farmers Market in New Jersey. Most people consider basil to be the main ingredient in pesto, but pesto can made with a variety of greens. This one combines spinach and basil with traditional pesto ingredients to make a sauce for pasta or a dip for bread.
