Seasonal recipes: 5 for the cucumber blessed

If your garden is bursting with cucumbers right now, here are 5 recipes that will help you get the most out of the abundance.

I did a post on five recipes for the zucchini blessed two weeks ago and a friend asked if I could do the same on cucumbers. She has a fantastic cucumber crop this year. Here are five recipes for Dawn (and the rest of you) that go beyond slicing them up and throwing them in a salad.
 
Banh-Mi Style Vietnamese Baguette – This vegetarian sandwich uses a lot more than just cucumbers from your garden or the farmers market. If you’re looking for something that's completely different to use up your cucumbers, take a look at this one from All Recipes.
 
Seared Scallops with Sautéed Cucumbers – I’ve never thought of the cucumber as a sautéing vegetable before, but Eating Well has a recipe that does just that and then pairs them with sweet scallops.
 
North African Cucumber-Tomato Salad – Cucumbers, tomatoes, parsley, mint, radishes and more – all abundant right now – go into this salad that must have some kick of flavor. It’s one of five cucumber recipes on the Seasonal Chef site.
 
Mint, Cucumber and Vodka Cocktail – Mint, cucumbers, vodka, Cointreau and a few other ingredients mix together to form this cool summer cocktail I found on Martha Stewart.
 

Cucumber Facial Mask – Cucumbers aren’t just for eating, you know. They have cooling and restorative properties that make them great ingredients for facial masks. Your Organic Gardening Blog has several quick and easy mask recipes that use cucumber.

I love your timely recipes. Could you help me out with the common variety of "Eggplant"?

The seasonal recipe I was planning for this week is a sandwich with eggplant in it, but unfortunately, it's ending up being one I'll post next week. Stay tuned.

Until then, try this that I created with the first eggplant (and still only) that I got from my garden this year.

Slice into rounds, salt, and leave in a sieve to let some water drain.
Dip into egg then very dry seasoned bread crumbs.
Fry in olive oil until crisp on outside.
Place the fried eggplant rounds.... More

The recipe posted for the Vietnamese sandwich calls for fish sauce - I can just leave it out - however, does anyone know of a great substitute for that?

so I don't know if this is a good substitute but I found it online:

Vegan Nam Pla (Thai Fish sauce)

1 1/3 cup water
2/3 cup soy sauce
Six 1½ inch pieces kelp
1 sun dried tomato (dry, not oil marinated)

In a 1-quart saucepan combine all ingredients. Bring to boil over medium heat. Strain. Store in Refrigerator

I also read that some Asian markets sells something called Vegetarian Oyster sauce that can be substituted, too.
