In this episode of Cooking with Chef A, she shows us how to prepare a sweet breakfast quinoa, featuring dried fruit and fresh spices.
Ingredients for Sweet Breakfast Quinoa
2 cups apple juice
1 cup quinoa
2 cinnamon sticks
1 tsp ground nutmeg
To taste:
Dried apricot
Golden raisins
Chopped almonds
Butter
Cream
Agave nectar
Directions
1. Add 2 cups of apple juice and 2 cinnamon sticks to medium saucepan. Add 1 teaspoon of ground nutmeg.
2. Bring the liquid to a boil. Once it's boiling, add 1 cup of quinoa.
3. Cover pot with a lid and reduce to a simmer. Cook for 20-25 minutes until liquid has been absorbed and quinoa is tender. Fluff quinoa with a fork.
4. While warm, add your choice of butter, cream, fruit, and chopped nuts, all to taste. Option to sweeten with agave nectar drizzled over the top.
5. Stir and enjoy.

I've read on Dr. Mercola that Agave nectar as it's processed is not healthy at all - toxic (I have one large bottle unopened so that came as a shock). I also wouldn't use so much apple juice either - agreeing with the earlier comment that it would make it too sweet. I would substitute honey for Agave as 'i love it' suggests. Quinoa is great and very healthy, and I love the addition of nuts for crunch and fruits for flavor and texture. I add quinoa to my oatmeal along with nuts and berries.
this is incredible. However, 2 c of apple juice was a bit too sweet for my taste. I will try half water/half juice next time. Adding chopped nuts makes a great crunch!
i make this recipe all the time now. it is so good, and if you're in a bind, you can really make it with just 6 ingredients - quinoa, apple juice, almonds, dried apricot, and honey. such a great recipe!
i absolutely have to try this recipe. so inventive, yet simple. healthy, but looks flavorful. curious what else chef a has under her hat!!
