This is a traditional Sardinian cheese made from sheep’s milk. The exotic twist is that it is fermented by a chemical excreted by the larvae of cheese flies, which make a home in the cheese. Removing the larvae before eating the cheese might require a bit of dodging, as the larvae are known to jump as much as six inches when they are irritated.
