Dill-Cucumber Tzatziki
Don’t let the name throw you. Tzatziki tastes like the best kosher pickle you’ve ever had without the snap.
Dill-Cucumber Tzatziki
Ingredients
1
cucumber
, peeled, diced
8 ounces
Greek yogurt
Half
lemon
, juiced
2 tablespoons
olive oil
1 teaspoon
sea salt
2 tablespoons
fresh dill
2 tablespoons
fresh parsley
1 clove
minced
garlic
Dash
cayenne pepper
Time estimates
Prep time:
15 minutes
Total time:
1 hour 15 minutes
Directions
To remove excess liquid, place diced cucumber in colander, add salt and cover. Set aside for 1 hour.
Place cucumber on paper towels and pat dry.
In mixing bowl combine cucumber with remaining ingredients. Stir until blended. Season to taste. Serve immediately.

Makes
1½ cups
for an excellent centerpiece to a veggie platter.
