Civet coffee: Good to the last dropping

When the coffee berries are eaten by a civet, they go down just like any other food: through the digestive system and out the other end. Workers then scoop it all up. So why do producers even go through the trouble of harvesting this coffee? The unique enzymes in the civet's stomach give the coffee a distinct bitter taste loved by coffee connoisseurs.
