Lemon Yogurt Pie
Lemon Yogurt Pie
Prep time: 40 minutes
Total time: 7 hours
Serves 6 to 8
Ingredients
4 ounces
lemon juice, about 3 large lemons
Half
lemon, zest
1
lemon, peel
1
ready-made 9 inch graham cracker pie crust
2 tablespoons
sugar
8 ounces
whipped cream
16 ounces
vanilla yogurt
Directions
Using a peeler, remove the skin from one lemon into oblong shapes and zest half a lemon. Set aside zest and lemon peel.
Juice lemons.
Combine zest, juice, sugar, whipped cream and yogurt in ceramic bowl.
Stir until ingredients have a creamy consistency, about 5 minutes.
Pour into pie pan.
Using a paring knife, cut peel into petal shapes. Place petals on pie.
Refrigerate and let harden, about six hours.
