Garlic mashed potatoes
Garlic-flavored mashed potatoes became cliché in the 1990s but the dish never would have become so popular had it not been so good. If you don’t have time to roast the garlic, separate the garlic cloves, blanch for a few minutes in boiling water, then peel and simmer in the milk while the potatoes cook. Daube of Beef
This is one of the easiest of beef stews to make. Preparations include minimal cutting, no browning, just putting everything together in the pot and baking. Make sure you’ve got plenty of time. Vegan pumpkin ravioli
This hearty, filling dish may be the hardest dish on our list but it’s still not too difficult. Several parts can be made ahead of time and then reheated when it’s time to serve. Pumpkin spice cookies
Here’s another vegan choice on our list. These cookies are incredibly easy to make. In fact, the recipe just calls for you to mix the ingredients together, chill everything for an hour, drop by the spoonful onto greased cookie sheets and then baking for 8 to 10 minutes.
