10 ideas for leftover asparagus
The short asparagus season is upon us, and it would be a shame to let leftover asparagus languish in the refrigerator. Here's how to make sure this spring treat doesn't become wasted food.

I have half a pound of roasted asparagus in my refrigerator. My local farmers market opened over the weekend, and I bought a pound of fresh, local asparagus that became part of Saturday night’s big “the farmers market is open” feast. I’ve been searching for creative ways to use it up, and here are 10 great options to share:
 
  1. Asparagus Bruschetta – The only vegetable in this bruschetta recipe that needs to be cooked is the asparagus, and that part is already done.
  2. Asparagus Risotto – Cooked asparagus is added at the very end of this risotto recipe.
  3. Asparagus Parmigiano – You’ll have to weed through the text to find the method for turning leftover asparagus into this quick dish that transforms it into something else.
  4. Asparagus Frittata – Chop up the leftovers and use them in this egg and feta cheese frittata.
  5. Asparagus Spring Rolls – Lasagna noodles instead of spring rolls wrappers hold together the asparagus and other fresh ingredients in these rolls.
  6. Cream of Asparagus Soup – You’ll need 4-8 stalks of leftover asparagus for this creamy soup.
  7. Asparagus Tacos – Who needs meat when you have hearty spears of asparagus?
  8. Asparagus Omelet – You probably don’t need a recipe for something like this, but in case you do, here’s one that also includes fresh mushrooms.
  9. Asparagus Pesto – Make a sauce for your pasta or eggs.
  10. Asparagus and Mustard Flatbread – Use store-bought flatbread to make this a super-quick, satisfying lunch.
