I made a simple pork loin roast in the slow cooker the other night. I have quite a bit left so I'm searching for recipes to make something completely new from the leftovers. It was good with mashed potatoes, gravy and a couple of vegetable sides, but I don’t want to serve it exactly the same way again.

Here are five recipes that would make good use of my leftover pork roast. They'll work with the loin roast I have, but they'll also work with any cut of pork roast.

  1. Asparagus, Pork and Arugula: This dish calls for cubed uncooked pork to be cooked first before adding the vegetables, but you can add the cooked pork and go straight to cooking the asparagus. It can be served over rice or Chinese noodles.
  2. Shredded Pork Enchiladas: Shred the leftover pork roast and use it as the filling in this enchilada recipe. If your roast was simple like mine, add some garlic, chili powder and cumin after shredding.
  3. Roast Pork in Spicy Tomato Sauce over Pasta: Chop the pork and add it to a tomato sauce that gets poured over the pasta of your choice.
  4. Pork Steak, Caramelized Onions and Gruyere Sandwich: Slice the leftover pork thin, add caramelized onions and cheese, and grill.
  5. Pulled Pork with Strawberry BBQ Sauce: You already have half the work done here; the pork is cooked and can be pulled or shredded. All you need is to throw together the sauce ingredients and simmer on low until it’s thick and ready for the pork. Serve on your favorite roll.
