5 recipes for Meyer lemons

I haven’t gone a day in the past few weeks without seeing a link on my Google+ page or my RSS feed that doesn’t lead to a recipe made with Meyer lemons. These lemons are native to China, but they are grown in the U.S., and some stores sell organic Meyer lemons. They’re sort of a cross between a lemon and a tangerine or mandarin orange.

These lemons are great in baked goods, and I have this Meyer Lemon, Pistachio, and Cranberry Scone recipe marked to make this weekend, but I wanted to see what else I can use them in besides baked goods. Here are five recipes that use Meyer lemons in healthy dishes.

Creamy Avocado Linguine with Meyer Lemon and Arugula – Avocados are used to create a sauce for this vegan pasta dish that’s brightened up with Meyer lemons and accented with peppery arugula.
Winter Pear Salad with Meyer Lemon Vinaigrette – A mixed green salad with goat cheese and pears topped with a lemony dressing. It looks amazingly good (and I don’t usually get very excited about salads).
Lemony Butternut Squash – You wouldn’t want to use regular lemons in this side dish, but the less tartness of Meyer lemons make them a nice compliment to roasted squash.
Meyer Lemon Blueberry Baked Oatmeal - A hearty, healthy, whole-gran breakfast that’s baked in the oven.
Roasted Broccoli Quinoa Salad – The broccoli is roasted with olive oil and Meyer lemon, then mixed together with cooked quinoa.

I think I’ll be buying a whole lot of Meyer lemons this weekend and making a few of these dishes.
