We are so close to spring and warmth, but it feels so far away today. After a couple of warmer days, the temperature dropped back to freezing today. A lot of the country got a fresh coating of snow in the past 24 hours. We are all ready for the thaw, but winter is giving up yet. Even my daffodils, which are usually in bloom by now, are saying “no way” to blooming.

There seem to be many weeks of soup making left with hearty winter root vegetables - including rutabaga. Here are some soup recipes that feature rutabaga to keep you warm.

  1. Rutabaga and Leek Soup – A lower-carb alternative to potato soup, rutabaga are paired with leeks to create a smooth, creamy pureed soup.
