I have been forcing myself to eat salad lately. I’ve never enjoyed it, probably because when I was a kid salad was iceberg lettuce, out-of-season tomato slices and sicklingly sweet ranch dressing.

When I decided it was time to eat salad whether it thrilled me or not, I decided I should at least make one that had flavors I liked. What I created isn’t earth-shattering. The combinations are common, but they’re combinations I really like. I’ve been eating this three or four times a week for the past month and I’ve learned that salad can be filling.

Something interesting has happened over the past couple of weeks. I’ve found I’m no longer forcing myself to eat this salad. I now crave it.

What’s on this salad?

  • 1/8 cup dried cranberries (I’ve been using Tierra Farm organic dried cranberries)
  • 1 tbsp chopped pecans
  • 1 oz. reduced-fat blue cheese crumbles (about 1/4 cup)
  • 1 tbsp Wegmans White Balsamic Vinaigrette
It’s that simple. Lots of varied greens, a little sweet, a little protein, some stinky cheese and a small amount of dressing. I measure everything out to make sure I’m not adding more blue cheese or pecans than I intend to. It’s amazing how easy it is to think that 1/2 a cup looks like 1/4 cup when it’s something I really like. The salad has 275 calories – perfect for lunch or for a light dinner if I’ve had a heavier lunch.

With the holiday parties that are coming up, I have a feeling I’ll be eating a lot more of this salad to counterbalance some of the dinners I’ll be having. I’m very glad I’ve learned to enjoy it.
