Asparagus is beginning to pop up in regions all over the country. It’s usually the first spring vegetable available. Many people get excited to finally return to fresh, seasonal produce in areas where the growing season isn’t year round.
I saw this video on Wegmans.com that demonstrates how easy it is to turn fresh asparagus into a creamy soup. It's the perfect time of year to make this soup because the weather can still be a little chilly, but we're ready for the flavors of spring.
Notice the host says the soup can go from stove top to table in under 15 minutes, but if you add up all the time she says to sauté and simmer things, the time is more like 30 minutes – especially if you count the time for chopping the vegetables. Still a fresh, 30-minute soup is very doable on most weeknights.
