My mom loves carrot and raisin salad, and when I saw this Mark Bittman video, I thought of her. Instead of using shredded carrots, Bittman uses shredded raw butternut squash and adds raisins and ginger to create a healthy, winter vegetable salad.

Half a cup of butternut squash has 3 grams of fiber, no fat, no cholesterol, and only 63 calories. It's packed with vitamin A, vitamin C, and other nutrients. (Source: Peertrainer)
