This fun recipe is a great way to celebrate New Year's Eve!

Growing up, I loved Root Beer Floats. The combination of creamy ice cream and carbonated soda was delightful to my young taste buds. I gave up soda in high school and lost my enjoyment of it fairly quickly, but I still love the fizzy and creamy combination.
Thankfully there are soda-free versions that are delicious and this is one of them! Sparkling apple cider is the sweet fizzy drink that can then be paired with whatever ice cream you’d like! In my case, I really loved this dairy-free coconut milk chai ice cream
, but any store bought vanilla ice cream (coconut milk based, or dairy based) works really well too.
This would make a very kid-friendly New Year’s Eve drink too!
It doesn’t really need an official recipe, but here’s a little photo tutorial. The steps are as follows:
- Start with cute cup.
- Fill 3/4’s full of ice cream
- Top with sparkling apple cider.
