Apple and Herb Roast Chicken

This aromatic roast chicken delivers crispy skin, herb-infused meat and piquant stuffing packed onto one plate.

Total time: 1 hour, 45 minutes

Apple and Herb Roast Chicken


  • 1 3 to 4 pound chicken
  • 2 tbs. olive oil
  • 1 small granny smith apple, sliced
  • 1 celery stalk, sliced
  • 1/2 cup sweet onion, chopped
  • 2 garlic cloves, minced
  • 1 tbs. Italian seasoning
  • 1 teaspoon lemon zest
  • 1 tbs. Kosher salt
  • 1 tbs. black pepper
  • 1 teaspoon paprika
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Prep chicken according to package directions. Set aside.
  3. In a mixing bowl combine apple, onion, garlic, Italian seasoning and lemon zest.
  4. Rub olive oil into the breasts, thighs and wings of chicken. Apply salt to body cavity. Pack cavity with 1 cup of an herbed apple and onion mix. The remainder can be used for stock or gravy. Dust skin with salt, pepper and paprika. Place chicken in roasting pan, place on the lower rack in center of oven. Cook and baste once or twice for about 90 minutes, or until juices run clear. Remove chicken from oven, rest on counter to cool for about 5 minutes prior to carving.
