With the growing size of the Hispanic population in the Unites States, new strains of Mexican cuisine are making inroads across the country. Salsa reigns as the top condiment in the kitchen, and we all eat tacos, burritos and enchiladas — often to our detriment, since portions tend to run large with appetizing sides consisting of fattening foods like sour cream and fried chips. Fortunately, there's plenty of room for fruits and vegetables when you make your own versions of traditional fare.
