Avocado and Cheese Sandwich

Luscious avocado and savory salsa add up to a sandwich that's more than the sum of its parts.


Prep time: 5 minutes

Total time: 7 minutes

Yield: Makes 2 sandwiches


Avocado and Cheese Sandwich


  • 1 large avocado, pitted
  • 2 tablespoons Spanish onion, diced
  • 2 tablespoons ready-made salsa
  • 1 tablespoon fresh lemon juice
  • Pinch sea salt
  • Pinch paprika
  • 4 slices multigrain whole wheat bread
  • 4 slices Monterey Jack cheese
  • 1/2 vine-ripened tomato, sliced
  • Handful Spanish onion slices, optional garnish
  • Pinch sea salt and black pepper, to taste
Cooking directions
  1. Combine avocado, onion, salsa and lemon in mixing bowl. Stir until blended, about 1 minute. Season to taste with salt and paprika.
  2. Spoon avocado mix onto bread. Layer with cheese and sliced tomato. Season to taste. Press slices together.
