French Swiss Melt
2 slicesSwiss cheese
4 slicessourdough bread
1 tablespoonolive oil
1 tablespoonfresh herbs chopped fine: rosemary, thyme, oregano or sage
Combine egg and milk in shallow mixing bowl. Beat lightly and season with salt and pepper.
Place cheese between sliced bread. Press firmly. Dip into egg batter, soaking each side.
Combine oil and butter in heavy-bottomed skillet over medium heat. Heat until butter begins to froth and bubble, about 2 minutes. Add herbs and saute for 1 minute or until fragrant. Cook sandwich 2 to 3 minutes on each side, until golden brown. Serve hot.
