Bacon Avocado Sandwich
A match made in heaven, the savory crunch of bacon pairs with the creamy richness of avocado.
Bacon Avocado SandwichMakes 2 sandwiches. Great with sweet potato fries.
- 6 slices bacon
- 2 tablespoons mayonnaise, divided
- 1 avocado, halved and sliced
- 1 tomato, sliced thin
- 4 slices rustic bread
- Cajun seasoning to taste
- Handful baby greens (optional)
Prep time: 20 minutes
Total time: 25 minutes
Line baking sheet with foil. Place bacon on baking sheet. Set oven to 400 degrees Fahrenheit. Place sheet in oven. Cook about 20 minutes or until brown. Remove from oven and place on paper towels. Trim excess fat.
Spoon desired amount of mayo onto sliced bread. Layer bread with bacon, avocado wedges and tomato. Season to taste. Top with bread. Press firmly without squishing.
