Brandy Baked Apples
1/3 cup raisins
2 tablespoons brown sugar
2 tablespoons brandy
1 teaspoon ground cinnamon
1/2 teaspoon allspice
4 small to mid-sized Granny apples
1 tablespoon unsalted butter, divided
4 oz. warm water
Preheat oven to 400 degrees Fahrenheit. In a small mixing bowl combine raisins, brown sugar, brandy, cinnamon and allspice. Stir and set aside.
Using a paring knife, stem apples. Core two thirds of the way down, removing seeds. Pack apples with raisin mix; pour the remaining juice from bowl over apples. Top with ¼ pat butter. Place apples in baking pan with a shallow bath of water.
Bake apples for 30 to 40 minutes until tender. Periodically baste with juices from pan. Serve hot.
