Double Pumpkin Pie

Pumpkin liquor tastes like liquefied roasted pumpkin with a kick. Add just enough to give pumpkin pie an earthy accent with an overlay of sweetness.

Prep time: 10 minutes  

Total time: 70 minutes, plus refrigeration  

 
Double Pumpkin Pie

Ingredients

  • 16 oz. pumpkin puree
  • 3/4 cup brown sugar
  • 12 oz. soft tofu, cubed
  • 1/2 teaspoon salt
  • 1.5 tbs. pumpkin pie spice
  • 1 to 2 oz. pumpkin liquor
  • 9-inch ready-made graham cracker piecrust
Directions
  1. Preheat oven to 425 degrees Fahrenheit.
  2. Combine puree, brown sugar and tofu in blender. Process ingredients until smooth, about 2 minutes. Add salt, spice, liquor and blend. Pour contents into pie shell.
  3. Place pie on lower rack of oven. Bake for 15 minutes. Reduce heat to 350 continue baking about 40 minutes. Bake until the edges are firm and center jiggles slightly. Remove from oven. Cool at room temperature 1 hour. Transfer to refrigerator overnight.
