Sesame Tofu Bites

Yield: Appetizer for 4
- 12 oz. extra firm tofu
- 2 oz. low sodium soy sauce
- 2 tbs. fresh ginger, grated
- 2 garlic cloves, minced
- 1 tbs. brown sugar
- 1/3 cup toasted sesame seeds
- 1 tbs. panko
- 1 tbs. all-purpose flour
- 2 oz. canola oil
- 2 tbs. sweet chili sauce
- 2 tbs. fresh cilantro, chopped
- 6 tbs. plain of Greek yogurt
- 2 tbs. fresh lime juice
- Pinch of salt
Place tofu on a cutting board lined with paper towels and press tofu down with 2 to 3 lbs. of weight to remove excess moisture, about 15 minutes. Cut tofu into 1/2 inch cubes.
Combine soy sauce, ginger, garlic and brown sugar in small storage dish. Add tofu, cover and flip once or twice to ensure an even coating, refrigerate for up to 2 hours.
In a small mixing bowl, combine sesame seeds, panko and flour stir until blended. Dredge each tofu cube in seed mix, about 5 minutes. Set aside.
Heat 2 oz. canola oil in large skillet over medium high heat, about two minutes. Add tofu cubes, fry until golden brown on each side, about 10 minutes. Place on paper towels to remove excess oil.
Place cubes in preheated oven at 250 degrees Fahrenheit for 20 minutes.
To make the dipping sauce. Combine chili sauce, cilantro, yogurt and lime in small mixing bowl. Remove cubes from oven and serve with sauce.
