Roasted Garlic

Heat turns pungent garlic heads into savory garlic candy. With a gentle squeeze, the roasted heads will easily pop out of their paper-like jackets and onto your fingers. Eat whole or add to any recipe where garlic is required.

Prep time: 5 minutes

Total time: 50 minutes plus cooling time

Yield: Makes 6 servings

Roasted Garlic

Ingredients

  • 6 heads garlic
  • 6 tablespoons olive oil
  • 6 pinches salt

Directions

  1. Remove top of garlic heads so that cloves are exposed.
  2. Top each head with olive oil and pinch of salt.
  3. Place garlic in the bottom of cast iron Dutch oven and cover with lid. Place on center rack of oven set to 350 degrees. Cook for 45 minutes. Remove from oven and allow garlic to cool. Store in airtight container until ready to use.
