Baked House Fries With Caramelized Onions

Dry, high heat crisps the potatoes, turning starch into gourmet house fries.
Baked House Fries With Caramelized Onions
  • 3 tablespoons olive oil, divided
  • 1 medium yellow onion, sliced thin
  • 1 1/2 pounds red potatoes, halved and quartered
  • Salt and pepper to taste

Prep time: 15 minutes

Total time: 40 minutes


  1. Preheat oven to 400 degrees Fahrenheit.
  2. Heat 1 tablespoon of oil over medium-high heat in large skillet. Add onions. Sauté until onions are tender, about three minutes.
  3. Liberally coat bottom of a 9x12 inch baking pan with remaining oil. Add potatoes, layering onions on top. Place in center of oven. Cook for about 20 minutes or until potatoes turn a golden color and onions are crispy. Remove from oven and serve hot.

Serves 4 as a side dish.
