Swiss Chard With Leeks
- 1 bundle Swiss chard, trimmed and chopped
- 2 tablespoons olive oil
- 3 leeks, rinsed and sliced (white part only)
- 2 ounces vegetable broth
- Salt and pepper to taste

Total time: 30 minutes
Trim bottom third of each stalk of chard. Cut stalks lengthwise and chop into half-inch sections. Roll and chop leaves into broad strips. Rinse and drain stalks and leaves separately.
Heat olive oil in large skillet over medium-high heat for about one minute. Place stalks in skillet. Sauté sliced leeks and stalks until tender for three to five minutes.
Add chopped leaves and broth. Sauté until broth is reduced and leaves wilt, three to four minutes. Serve hot.
Serves 4 as a side dish or toss with pasta to make an entrée.
