Baked House Fries With Caramelized Onions
3 tablespoons olive oil, divided
1 medium yellow onion, sliced thin
1 1/2 pounds red potatoes, halved and quartered
Salt and pepperto taste

Total time: 40 minutes
Preheat oven to 400 degrees Fahrenheit.
Heat 1 tablespoon of oil over medium-high heat in large skillet. Add onions. Sauté until onions are tender, about three minutes.
Liberally coat bottom of a 9x12 inch baking pan with remaining oil. Add potatoes, layering onions on top. Place in center of oven. Cook for about 20 minutes or until potatoes turn a golden color and onions are crispy. Remove from oven and serve hot.
