A simple mixed green salad followed by goat cheese makes the most of cranberries and walnuts.

Baked Goat Cheese with Mixed Greens
Ingredients
1/2 clovegarlic, minced
1 tablespoonwhite balsamic vinegar
1 teaspoonDijon mustard
3 tablespoonsolive oil
1/2 teaspoonhoney
Dashsea salt and black pepper to taste
4 cupsmixed salad greens: red, green lettuce, arugula
1/2Spanish onion, sliced thin
1/2 cupwalnuts, chopped, lightly toasted
1/2 cupdried cranberries
4 slicesFrench bread
4 ouncesgoat cheese
Sprigsfresh thyme, chopped fine
Cooking directions
Preheat oven to 400 degrees.
Combine garlic, olive oil, vinegar, mustard and honey in glass jar. Seal and shake until blended. Season to taste.
Place bread and walnuts on a baking sheet and toast for about 3 to 4 minutes. Meanwhile, cut goat cheese crosswise into small sections. Remove bread from oven. Top with goat cheese and thyme. Return to oven until cheese begins to melt, about 3 to 4 additional minutes. Remove walnuts.
Combine greens, onion, walnuts and dried cranberries in a mixing bowl. Toss salad with dressing. Divide greens evenly and plate with goat cheese croutons.
