Baked Goat Cheese with Mixed Greens

A simple mixed green salad followed by goat cheese makes the most of cranberries and walnuts.

Prep time: 15 minutes  

Total time: 30 minutes  

Yield: Serves 2-4

Baked Goat Cheese with Mixed Greens


  • 1/2 clove garlic, minced
  • 1 tablespoon white balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 3 tablespoons olive oil
  • 1/2 teaspoon honey
  • Dash sea salt and black pepper to taste
  • 4 cups mixed salad greens: red, green lettuce, arugula
  • 1/2 Spanish onion, sliced thin
  • 1/2 cup walnuts, chopped, lightly toasted
  • 1/2 cup dried cranberries
  • 4 slices French bread
  • 4 ounces goat cheese
  • Sprigs fresh thyme, chopped fine
Cooking directions
  1. Preheat oven to 400 degrees.
  2. Combine garlic, olive oil, vinegar, mustard and honey in glass jar. Seal and shake until blended. Season to taste.
  3. Place bread and walnuts on a baking sheet and toast for about 3 to 4 minutes. Meanwhile, cut goat cheese crosswise into small sections. Remove bread from oven. Top with goat cheese and thyme. Return to oven until cheese begins to melt, about 3 to 4 additional minutes. Remove walnuts.
  4. Combine greens, onion, walnuts and dried cranberries in a mixing bowl. Toss salad with dressing. Divide greens evenly and plate with goat cheese croutons.
