Seedy Spinach Salad
Not seedy as in down-and-out but packed with toothsome toasted seeds that deliver a righteous crunch.

Serves 2-4
Seedy Spinach Salad
Ingredients
1-2 tablespoons
pumpkin seeds, toasted
1-2 tablespoons
sesame seeds, toasted
1-2 tablespoons
poppy seeds, toasted
1 tablespoon
lemon juice
Pinch
salt, pepper and superfine sugar
3 tablespoons
canola oil
4 cups
baby spinach, rinsed
Cooking directions
Heat skillet for about 1 minute. Add pumpkin, sesame and poppy seeds.
Stir until seeds begin to pop and become fragrant about 3 to 4 minutes. Remove from heat.
Combine lemon, salt, pepper and sugar in glass jar. Seal and shake until blended.
Place spinach in a mixing bowl. Add toasted seeds and dressing. Lightly toss ingredients and plate.
