Lentil burgers are packed with flavor and they’re filling, without adding extra calories.

- 1 cup French lentils, uncooked
- 2 1/4 cups low-sodium vegetable broth
- 2 cloves garlic, minced
- 1 small red onion, diced
- 1 organic carrot, shredded
- 2 tbs. ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon ground cinnamon
- 1/3 cup rolled oats
- 3 tbs. tomato paste
- 2 tbs. extra virgin olive oil, divided
- Salt and freshly ground pepper to taste

Bring lentils to a low boil in large saucepan with broth. Cover and reduce heat, simmer for 15 about minutes until tender. Remove from heat. Cool till just warm. Drain water. Whiz lentils in a food processor, until a coarse paste forms, about 1 minute.
Place lentil paste in a large mixing bowl. Add garlic, onion, carrot, plus rolled oats and tomato paste. Add spices, cumin and paprika. Fold and mix well, until all the ingredients are combined. Refrigerate for 30 minutes (if needed).
Mold mixture into patties. Add 1 tbs. oil to large skillet over medium high heat, about 1 minute. Place patties in skillet sear for 3 minutes on each side. Reduce heat, cover and cook for 5 minutes. For toppings and garnishes, we recommend arugula, mayonnaise, tomatoes, salt and pepper.
