Glazed Ginger Carrots

Carrots come to life with a little bit of TLC. You just place the ingredients in a sauce pan, and the heat takes care of the rest.

Prep time: 5 minutes  

Total time: 15 minutes 

Yield: 4 to 6 servings

 
Glazed Ginger Carrots

Ingredients

  • 1 lb. organic carrots, rinsed and trimmed
  • 1/3 cup fresh squeezed orange juice
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon grated ginger
  • 1/4 teaspoon cumin
  • 2 tbs. parsley, chopped
  • 1 lemon wedge
Directions
  1. Cut carrots into even sized sections, spears or rounds. Place in saucepan with orange juice, salt, pepper, ginger and cumin. Bring to a boil. Cover and simmer for 10 minutes or until fork tender.
  2. Transfer carrots to serving dish and toss with lemon juice and parsley. Serve hot.
