Potato and Leek ChowderServes 6
- 2 large leeks, whites only, sliced and halved
- 3 large Idaho potatoes, peeled and cubed
- 4 cloves garlic, chopped
- 4 tablespoons butter
- 1 cup water
- 1 1/4 cup milk
- Salt and pepper to taste
Prep time: 7 minutes
Total time: 40 minutes
Melt the butter in a large saucepan and add the leeks, potatoes and garlic. Toss and saute for 15 minutes until potatoes start to get soft.
Add the water and let cook another 10 minutes. When the potatoes are very soft, using a potato masher or fork, smash about 1/3 of the pot. Mix in the milk and flavor with salt and pepper to taste. Enjoy and serve warm.
