We're getting into the holiday season and that means traditional feasts with all the trimmings, and everything topped with gravy. This recipe is a delicious vegetarian version of the must-have topping in a holiday meal.

I love the hearty flavor of this gravy, with a rich flavor that holds its own against everything from stuffing to mashed potatoes to a little something extra on a casserole. No meat drippings needed -- the mushrooms add all the heartiness you could want!

Yield: About 3 cups of gravy

Vegetarian mushroom thyme gravy


  • 1/3 cup dried mushrooms (shiitake or mixed)
  • 2 cups vegetable stock
  • 3 tablespoons butter
  • 1 1/2 tablespoons minced shallot
  • 3 tablespoons flour
  • 3 tablespoons soy sauce
  • 1/2 cup light cream
  • 1 tablespoon sherry
  • 1 tablespoon minced fresh thyme
  • 1 dash salt & pepper
Cooking Directions
  1. In a small pot, bring the vegetable stock to a boil. Add the mushrooms to a small bowl and pour the boiling stock over the top. Let soak for about 20 minutes. Then remove the mushroom from the bowl and mince them. Reserve the stock for later.
  2. In a medium saucepan over medium heat, melt the butter and add the minced shallot. Sautee the shallots until they're softened, about 5 minutes. Add the flour to the pan while stirring constantly to coat everything.
  3. Gradually add the reserved vegetable stock, a little at a time, stirring constantly to evenly incorporate the liquid and create a smooth mixture. Continue to cook the gravy over medium heat until it thickens.
  4. Next, add in the reserved minced mushrooms, soy sauce, cream, sherry, and thyme. Cook for 2-3 more minutes until everything is heated through and the gravy is the desired consistency. Add a dash of salt and pepper and adjust to taste.
  5. You can leave the gravy as is, with the chunks of diced mushroom for texture, or you can use a wand blender to blend it to a smooth consistency. Pour it over potatoes, stuffing and practically everything else on your plate, and enjoy!
