Boulder is a foodie place. We have all kinds of alternative eaters. Vegetarians, vegans, raw food enthusiasts, gluten-free dieters, free-range meat types, locavores and more are found here. Whole Foods Market is happy to provide for those who can afford to shop there. Shopping regularly at Whole Foods is out of my budget. Eating natural and health foods however, is something I can do.
I pledge to eat more fruits and veggies! While I am a fairly health-conscious consumer, I certainty could benefit from eating closer to the earth (that is, foods that are whole and delicious in their natural form). I have begun the process by buying bananas, tangelos, mangos, strawberries, pineapples, avocados, a variety of pears, red and green peppers and spinach. I plan on starting more of my mornings with cold and delicious fruit smoothies.
I will not be doing anything too crazy. I don't see myself eliminating bread, eggs or cheese any time soon. But I will try to be more conscious of what I eat. Small changes to how we eat can go a long way in changing how we feel about ourselves and our relationship to the earth.
