Summer recipes are all about fresh fruit and veggies, eating outside, and what you can whip up on the grill. This dish of my mother's has always been a family favorite and makes a great dessert for summer get-togethers. Getting creative with the red and blue berries on the white cream cheese background also makes for a festive, patriotic delight!
1 pkg. (8 oz.) cream cheese, softened
1/2 cup sour cream
1/4 cup confectioners' sugar
2 tbsp. milk (2% is fine)
1 tube (16 1/2 oz.) refrigerated sugar cookie dough, softened
2 cups fresh blueberries
2 cups fresh raspberries
8 fresh strawberries, sliced
3/4 cup apricot preserves
In a large bowl, beat cream cheese and sour cream until very smooth. Beat in sugar and milk into this mixture. Chill.
Press cookie dough onto an ungreased pizza pan (14 "). Bake at 350 degrees for 15 - 18 minutes or a deep golden brown. Cool completely.
Spread cream cheese mixture over crust to within 1/2 " on edge. Then arrange fruit on top.
Microwave preserves, uncovered, on high for 45 - 60 seconds or until melted. Drizzle this over the fruit. Chill until ready to serve.
Of course, this recipe can be altered to include the fruits of your choice. Kiwi and grapes are another popular addition that make this pizza not only more fun to decorate, but more colorful as well.
If there are any leftovers, refrigerate.
