Tasty fried green tomato recipe
More than a movie title, these end of season treats are tangy, tart and tasty.

As always, I am seeking the Holy Grail of interesting taste treats and how to make them a little better for us to eat. That being said, these are fried green tomatoes ... so healthy may not be as easy to attain here.
 
Fried green tomatoes
 
Ingredients
 
  • 5 medium to large, firm green tomatoes, cut crosswise into 1/4-inch slices (Cutting slices thicker than 1/4-inch may make them bitter because they don't cook all the way through.)
  • Kosher or sea salt and freshly ground black pepper, to taste
  • 2 cups panko bread crumbs or corn flakes (Panko bread crumbs, like corn flakes, have a coarser texture than ordinary bread crumbs, which gives a light and crispy texture)
  • 1 cup finely ground cornmeal
  • 1 teaspoon paprika
  • Garlic Mrs. Dash, cayenne pepper, cumin, curry or whatever spices you like to taste
  • 3 eggs, lightly beaten
  • Vegetable oil
Instructions
  1. Sprinkle the tomato slices with the sea salt and freshly ground pepper; set aside. (If you are on a low sodium diet, you can substitute your favorite Mrs. Dash seasoning.)
  2. Combine cornmeal, paprika, Mrs. Dash garlic, cayenne, cumin and curry in a shallow bowl.
  3. In another bowl, beat the eggs. (Beat the egg with a fork until the yolk and white are combined.) 
  4. Cover the bottom of a heavy skillet (I use cast iron) with 1/2 inch of oil, then place it over medium-high heat.
  5. Coat the tomato slices in the egg, then dredge (dip) them in the cornmeal and spice mixture, then dip in the panko/corn meal mixture.
  6. Fry as many tomatoes as fit comfortably in the pan until nicely browned. If your oil is about 375-degrees this should take about 2 minutes per side.
  7. Transfer them to a paper towel-lined platter. Repeat until all the tomatoes are cooked.
 
I think I'll try adding these to a vegetarian lasagna and see how that works instead of using noodles. I'll keep you posted! Let me know how you like the fried green tomatoes!
