Ruff, The paper above was published in the journal Entropy. They say: "Entropy is a member of the Committee on Publication Ethics (COPE). MDPI takes the responsibility to enforce a rigorous peer-review together with strict ethical policies and standards to ensure to add high quality scientific works to the field of scholarly publication." Why do you say that this paper wasn't peer reviewed?

As mentioned in the above, this research did come from a biased source. However, that doesn't mean it isn't true. I'd love for Teavana especially, to be fine, as I think they have some good ideas going for them. But so far they haven't been able to prove that any of this isn't true (which would be as simple as releasing their test results, which the short sell company did do). And Celestial Seasonings have already received FDA warnings about their quality control.

Didn't mean to step on the toes of the microwave lovers out there! I am sure that there are yummy ways to use it (though I have yet to be served a microwaved (homemade) meal that was *better* than it would have been if cooked in a normal oven. However, it is actually true that overcooking food in the microwave can dry it out, as the way microwaves cooks releases moisture. However, food can also be dried out when reheated other methods too, I just find it yummier and easier to avoid using stovetop methods of reheating. I used a microwave on a regular basis all during my high-school years, and at least the microwaves I used heated unevenly at times (once again, microwaves heat differently, and sometimes the center of the food could be quite hot, while the outside is cool), and all microwaves can change the textures of certain foods. Bread is one of them. Microwaving bread to reheat it works okay if you eat it hot, but if it cools to much, it will have a more rubbery texture (I learned this at the bakery I worked at). Those are not the reason we don't own one, though. That would take a whole post to explain! However, I included the leftover night idea in my post for those who enjoy microwaves, as I know many do.
