I feel like this post is making people confused. Nitrates are fine, sodium nitrite is not. Sodium nitrite converts into nitrosamines when it interacts with gastric juices. It's also what was used as the main preservatives for cured meats. Also I would ask this guy for his sources. I can just as well say something like "cigarette smoke is not bad for you, in fact you're exposed to more chemicals in the air you breathe each day than what you're exposed to smoking a cigarette" Which of course we all know isn't true.
