Farm to table

The herb garden in front of the restaurant is a busy place regardless of time of day. For the nine-course dinner, cooks snip herbs as they need them, preserving flavor, texture and vitamin content. Ubon Vongkunthong, who has worked as a server at The Herbfarm for three years, picks floral table dressing just hours before guests arrive.
