Heirloom crops

As a member of the nonprofit organization Seed Savers Exchange, The Herbfarm helps preserve the lineage of heirloom crops such as the hubbard squash (pictured left). “They’re funky-looking, but they’re really good,” Vingelen says.

Other star crops this winter included turnips, dikon radishes, potatoes and burdock root. Many of their root crops will survive all winter, allowing them to be harvested as needed.
