Inside the 'earthhouse'

This greenhouse is referred to as an “earthhouse” because the crops grow in the ground. Heated only with sunlight, the earthhouse helps Vingelen grow crops year round, keeping the restaurant's need for outsourced ingredients to a minimum.

Vingelen and Executive Chef Keith Luce together decide what crops will be used in the restaurant that can also replenish the soil. Structures like the earthhouse — which is simple enough that you could set one up in your backyard — help the farm produce enough food year round to fee roughly 800 hungry dinner guests each month.
